About This Coffee

A single-origin washed coffee from Chiapas, Mexico, produced by FESICH (Federation of Indigenous and Ecological Cooperative Societies of Chiapas), a women-led co-op established in 2013. Grown at elevations of 1200-1750 meters using Typica, Bourbon, Oro Azteca, Costa Rica 95, and Catimor varieties. Medium roasted with balanced, sweet, and smooth flavor profile featuring notes of sweet chocolate, red fruit acidity, and toffee.

Salto Coffee

Karina and Marcus Luscher established Salto Coffee in 2012, roasting at 8,200 feet elevation in the mountain town of Nederland, Colorado. Karina is the primary force behind roasting operations, making Salto a woman run specialty roastery with a distinctly high altitude perspective on the craft. Production runs on a Diedrich IR 12 paired with Cropster software, and head roaster Rob Langone conducts origin trips to stay close to farming practices and sourcing decisions. Their lineup includes signature blends, seasonal single origins, and limited reserve lots, all roasted in small batches. Salto was a finalist for the 2024 MTPak Coffee Packaging Design Awards, with bag designs that draw on the mountain landscape surrounding the roastery.
