This coffee comes from relationships in Chiapas and Veracruz regions of Mexico. Both regions offer distinct characteristics: Veracruz features higher yields and larger farm sizes with central wet mill processing, while Chiapas has a strong organic production culture and cooperatives that incorporate new processes and varieties. The coffee represents larger high-end lots from single producers working with their communities. The coffee is nitrogen flushed and vacuum packaged.
Ikon Roastery was founded in 2016 by Marcel Costas in South San Francisco, California, after a transcendent coffee experience in 2011 set him on a new path. Costas runs the company alongside co founder and Director of Operations Alex Le as a family business. The roastery produces medium bodied, sweet, juicy profiles and rotates its specialty offerings every ninety days to keep the lineup fresh. Ikon holds California Green Certification for its environmental practices and partners directly with producers who prioritize sustainable farming and fair labor. An Especial Line spotlights exceptionally rare coffees, while everyday offerings like the Carl The Fog blend anchor the roster.
