A washed coffee from Ixhuatlán del Café, Veracruz, Mexico, sourced from approximately 220 smallholder farms at 1500–1700 meters altitude. The Santuario Project, which began operations in Mexico in early 2017, completed its processing center in Ixhuatlán in mid-2019, drawing on expertise from Colombia, Costa Rica, and Brazil. Varieties include Bourbon, Caturra, Catuaí, and others. Roasted as espresso, with flavor notes of milk chocolate, orange zest, and forest honey.
