The Caturra Red and Yellow variety undergoes an anaerobic natural fermentation of 48 to 60 hours, followed by intermittent drying and a 45-day rest period. Decaffeinated via the Swiss Water Process. Grown among guava trees, it offers flavor notes of guava, black plum, lime, and cocoa. The estate uses solar energy and maintains a reforestation program.
