Irving Farm Coffee

Irving Farm Coffee was founded in 1996 by David Elwell and Steve Leven, who opened their first café at 52 Irving Place in Manhattan's Gramercy Park neighborhood. The company roasts all of its coffee at a facility in Millerton, New York, housed in a converted carriage house on a 110 year old former dairy farm, with 7,500 square feet dedicated to the operation. Irving Farm runs three roasters, a Loring that burns 85 percent less fuel than conventional machines, an American built Diedrich, and a German made Probat, each assigned to different origins and profiles. The sourcing team visits farms directly, building long term channels of communication with producers that go beyond standard direct trade certification. The roastery operates on a roast to order model, prioritizing freshness across its wholesale accounts and café locations in New York.
