About This Coffee

This natural-processed coffee is produced in the Chelchele district of Yirgacheffe, SNNPR region of Ethiopia at altitudes ranging from 1900 to 2200 meters. The coffee is cultivated by smallholders and processed at the Lahamenegu Mill using organic practices. The varieties grown are Kurmue, Dago, and Wolisho. The cherries are hand-sorted and sun-dried on raised beds for 12 to 15 days until reaching 10-12% moisture content. The coffee trees grow under shade of Enset, Albizia, Acacia, Militia, and Polyscias trees in fertile, clay-rich soil. Harvest takes place from November to January.

Pair Cupworks is a specialty micro roastery in Mesa, Arizona, founded by Kimhak Em and Eugenia Tai. Kimhak brings over 30 years of food service experience and a culinary background; Eugenia combines structural engineering with commercial illustration and handles the brand's visual identity. They began roasting in 2017, initially selling beans online while working day jobs, and opened their first coffee bar in 2020. Food & Wine Magazine named them Best Coffee Roaster in the state in 2022. They roast in small batches with the goal of developing clean flavours that respect the work of farmers and producers.
