About This Coffee

This single origin coffee is grown by Nelson Moreno in Santa Bárbara, Honduras, a region recognized as one of Central America's most unique coffee micro-terroirs. The Pacas variety is processed using an innovative anaerobic method: depulped and fermented anaerobically in plastic barrels for 80 hours, transferred to ceramic fermentation tanks for 12 hours before being washed, and finally dried for 12-13 days on greenhouse raised beds. The coffee exhibits notes of fruit punch, cherry blossom, and plum, with a juicy and expressive cup profile that is pleasantly sweet and wonderfully complex.

Madcap Coffee Company

Madcap Coffee Company was founded in 2008 by Trevor Corlett in Grand Rapids, Michigan, starting with a café on Monroe Center where he also roasted the coffee. Corlett, who won the 2016 Eastern Conference United States Barista Competition and placed as high as third at nationals in consecutive years, brings a competitive barista's precision to the roasting program. The company now operates from a dedicated roastery and training space on Fulton Street, with additional locations in Grand Rapids, Leland, and a fourth café opening in Ferndale in early 2026. Revenue splits evenly between retail and wholesale, and the training facility is designed to be visible to patrons, making education a public facing part of the brand. Madcap's growth over nearly two decades has made it one of the defining specialty roasters in the Midwest.
