This coffee is from the El Limoncillo farm in the Matagalpa region of Nicaragua, owned by Fincas Mierisch. The farm is named after the Limoncillo, a small type of lemon that grew on the property when it was purchased in 1930. The coffee is the Javanica variety, an Ethiopian heirloom originally taken to Java and later introduced to Nicaragua. This lot underwent washed processing with 36-hour dry fermentation in tiled tanks, followed by a 15-day drying process - two days under full sunlight and 13 days on raised beds with 75% shade. The farm won 2nd place in Nicaragua's 2007/2008 Cup of Excellence with this variety.
