Finca Los Papales is a Rainforest Alliance certified coffee from Jinotega in north central Nicaragua, located at 1,300-1,700 meters elevation. The washed processed coffee is grown on an estate managed by the Lopez family and features a blend of Bourbon, Caturra, Catuai, and Pacamara varieties. The farm performs both wet and dry milling on-site for quality control and is committed to environmental conservation and community development.
Square One Coffee has been roasting in Lancaster, Pennsylvania since 2000. Josh and Jess Steffy took ownership in 2007 and refocused the operation on specialty grade coffee, responsible sourcing, and barista education. The team includes several SCA Certified Lead Instructors, BGA Certified Baristas, and a licensed Q Grader, reflecting a deep investment in craft at every level. Square One pays premium prices well above fair trade for its green coffee and sources with an emphasis on transparency and respect for every person in the supply chain.
