About This Coffee

This experimental Colombian coffee is produced by Jairo Arcila at Finca Santa Monica in the Quindío Department of central-west Colombia. It is a single varietal 100% Caturra micro-lot grown at 1,400-1,500 meters above sea level. The cherries undergo innovative Thermal Stroke Natural processing, an experimental technique where cherries go through anaerobic fermentation twice (48 hours, then 20 hours at 70°C) sandwiching a mechanical drying process (20 hours at 35°C). This creates complex, unusual flavor profiles with notes of red grape, fig, and chrysanthemum florals. Suitable for both filter and espresso brewing.
