The coffee underwent washed processing: ripe cherries were selectively hand harvested and immediately pulped, followed by a brief fermentation. The coffee was then washed to fully remove any remaining mucilage and dried on raised beds for 15-20 days. The cup profile is plush and rich with flavors of rhubarb, currant jam, and melon.
