This coffee is produced by Oscar Hernández at the Los Nogales farm in Bruselas, Huila, Colombia, at an altitude of 1750 meters. It is a Gesha variety processed using a cold room natural method, also known as dark-room dried (DRD). This process involves drying the coffee slowly in a UV-free environment with controlled temperature and humidity. The resulting cup features complex florals, vibrant acidity, and notes of stone fruit, specifically peach, and tropical fruit like pineapple, with a long, tea-like finish reminiscent of oolong.
