This coffee is an Aji natural varietal from Finca El Diviso in Bruselas, Pitalito, Huila, Colombia, grown at 1,800 meters above sea level. The Aji varietal, also known as Bourbon Aji or Chili Bourbon, traces its genetics to Ethiopia and gained prominence after placing 6th in Colombia's Cup of Excellence. The coffee undergoes an extended natural process where fully ripe cherries are dried whole on raised beds for 3 to 6 weeks with constant turning and temperature monitoring. The flavor profile features mandarin orange, mango, strawberry, rose florals, melon-like sweetness, and bergamot-like aromatics.
