This single-origin coffee from Boquete, Panama, is grown at 1500 meters altitude on Carolyn Saraceni Castillo's 15-hectare farm. The Catuai variety undergoes CCD's Dynamic Cherry processing method, where cherries are selected at brix level 18 and pH 4.5, patio-dried at 32°C, then fermented in plastic bags for up to three weeks. The coffee features flavor notes of maraschino cherries, raisins, blackberries, strawberry, and mango with a winey character.
