This Geisha coffee is from Elida Estate in Panama, located at approximately 1,700 meters above sea level in the outskirts of the Baru Volcano in Boquete. The Lamastus family has been producing coffee here since 1918. The Plano plot is a beautiful flat area at the entrance of Elida Estate, partially shade grown. The coffee benefits from unique growing conditions including high elevation, rich volcanic soils, low temperatures, and surrounding virgin cloud forest. Cold nights extend the ripening time by one month. The coffee is harvested when burgundy-ripe, pulped and washed once full fermentation is reached. Fermentation lasts 24 to 36 hours at temperatures of 13-15°C at night and 18-20°C during the day, followed by drying in the Dark Room for 15 to 20 days.
