Cherries are sorted by density, fermented for approximately 30 hours overnight at controlled temperatures, then dried on African-style raised beds for 11 days followed by temperature-controlled finishing. The coffee presents a complex flavor profile with pineapple, berries, orange, and caramel in the aroma, evolving to orange juice, strawberry, dried pineapple, and mango on the palate with toffee and cocoa in the finish.
