La Pastora is a benchmark single origin coffee from the Tarrazu region in Costa Rica's San Jose province. Grown at 1,450-1,500 meters altitude, this washed coffee is produced by the CoopeTarrazú cooperative representing over 3,500 local farmers. The beans are Caturra and Catuai varieties, roasted to a light-medium level. The cup offers a classic, clean profile with notes of raisin, dark chocolate, black tea, honey, and Fuji apple, featuring syrupy plum and subtle nuttiness with vibrant acidity.
