This coffee is from Pedro Moreno, an 87-year-old producer and pioneer of coffee farming in the Santa Barbara region of Honduras. Starting in 1983 with less than a hectare, the operation has grown into one of the most respected in Honduras, producing specialty micro-lots. The coffee features the Kenyan SL28 varietal and is processed using a washed method. Hand-picked cherries are depulped and dry-fermented in tanks for up to 18 hours, then rinsed four times before drying. The coffee showcases vibrant summer fruit notes and honey sweetness. Processed in collaboration with the Beneficio San Vicente mill.
Murmuration Coffee Co. is a specialty roastery based in the Chichester area of West Sussex, founded by Dom Pulleyn, a veteran of some of the UK's biggest specialty coffee names and a competitor in the UK Barista Championships. The name evokes the unity and interconnection of a murmuration of starlings, reflecting the roastery's emphasis on relationships throughout the supply chain. Dom sources coffees with a focus on provenance and quality, working with producers like the Ospina family in Huila, Colombia, whose Linocaro farm has placed repeatedly in the Cup of Excellence. The range spans single origins from Rwanda, Burundi, Ethiopia, and Colombia alongside signature espresso blends.
