This coffee is a Tim Tim variety from the Pegasing subdistrict in the Aceh region of Indonesia, grown at approximately 1,400 meters altitude. It is processed using carbonic maceration—a carbon dioxide fermentation method where cherries ferment in oxygen-free tanks for 70-80 hours, then dried on raised beds in temperature-controlled tunnels for 20-25 days. The Tim Tim variety is a hybrid of Timor Hybrid (itself a natural cross between Coffea arabica and Coffea canephora) with other local Indonesian varieties. The coffee displays distinctive flavor notes of rhubarb and cacao nibs.
