This is a unique Sidra variety coffee from Finca Soledad in Imbabura, Ecuador, produced by Pepe Jijon at 1515 meters altitude. The coffee undergoes an innovative Wave Hybrid process that combines elements of natural and honey processing—cherries are first stored for 4 days in a cold room, then dried as natural for 12 days, rehydrated, depulped, and finally dried for 3 more days as honey. The result is a light roast coffee with distinctive tasting notes of sprite, red mango, pomegranate, and rose.

Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
