Today the family operates a modern roasting and processing facility in Souda while running two Monogram cafes in Chania's center and old town, plus an evening sibling venue called The Bar by Monogram. Their approach to specialty roasting is distinctly data driven, using advanced equipment and extensive cupping evaluation to target a consistent balance between acidity and sweetness in every batch. The sourcing program spans origins from Ethiopia and Kenya to Panama, Colombia, Costa Rica, Guatemala, Brazil, and Tanzania, while a traditional Manolikakis branded Greek coffee roasted for ibrik preparation honors the family's heritage alongside the modern lineup.
