This coffee originates from the Cajamarca region in Peru, a semi-dry, semi-cold tropical highland with fertile soil at high Andean mountain elevations ranging from 1600-1900 meters above sea level. Produced by the Women Lima Coffee project, which supports 110 coffee-growing families led by women farmers. The coffee features varieties including Catimor, Caturra, Bourbon, and Typica, processed using the washed method. Smallholder producers farm on 2-3 hectares of land, with many practicing organic farming. The flavor profile is sweet with tart, winey acidity, featuring jammy berry and cocoa flavors.
Braden and Mary Walter launched Redhawk Coffee Roasters in Pittsburgh in 2016, starting with a mobile coffee operation before quickly establishing a permanent home. Braden brings nearly two decades of coffee industry experience to the roastery, where all production runs through a 15 kilogram Giesen roaster at their dedicated roasting facility. The approach is small batch and detail oriented, with an emphasis on sourcing coffees that reward careful roasting. What started small has grown steadily, driven by the same hands on commitment to quality that defined day one.
