This single-origin coffee comes from Cajamarca, Peru, grown by Dominga Carrasco and her husband Amado Flores at their farm El Amanecer at 1800 meters altitude. The Yellow Caturra varietal is washed-processed and features a distinctive fruited and floral character. The cup presents punchy florals upfront with layered citric undertones reminiscent of osmanthus tea, followed by tart quince jam notes and subtle starfruit on the finish.
Shoebox Coffee Roasters is a Chicago based micro roastery focused on light roast profiles that emphasize acidity, complexity, and fruit forward flavors. Founded by Maxwell, who previously roasted for Jimmy Beans, the operation is built around sourcing and small batch production. Shoebox conducts origin trips to build direct relationships with farmers, including work with Hacienda La Papaya in Saraguro, Ecuador, sourcing varietals like Mejorado, Sidra, and Geisha.
