Peru Eli Chilcon is a single-origin coffee from Cajamarca, Peru, grown at 1,800 meters altitude on La Montaña farm by producer Eli Chilcon and family. The coffee features Caturra and Pache varieties and is washed-processed with an extended 48-hour fermentation. The cup profile includes structured citrus acidity, layered maple and toffee sweetness, and a lingering blackberry finish. Cherries are harvested July-October, rested after picking, pulped, fermented 48 hours, washed, and dried over approximately two weeks.
