This Peruvian coffee comes from small-scale farmers in San Francisco, Los Llanos, San Andres, and El Sauce in the San Ignacio region. The coffee is Organic certified through the Asociación Agropecuaria de Productores del Norte. Classic varieties include Catuai, Caturra, Bourbon, and Mundo Novo. The coffee is picked at peak ripeness, floated, and hand-sorted before undergoing a 20-30 hour fermentation process followed by slow, shaded drying. The result is a smooth cup with flavor notes of milk chocolate, trail mix, and green apple.
The Good Coffee Cartel was established in 2017 in Glasgow, Scotland by co-founders Todd Whiteford and Courtney Patrick Brennan.
