About This Coffee

This decaffeinated specialty coffee is from Peru, specifically from the Rulindo District at 1,800-1,900 meters altitude. Produced by the ANDE PERUANOS cooperative, founded in 2020 with over 260 members. The coffee is a blend of varieties grown at varying altitudes between 980 and 2,169 meters, scoring between 80-86 points. It has been decaffeinated using the CO2 carbonated water method (Sparkling Water process), a natural chemical-free technique that preserves flavor. The cherries are selectively harvested, mechanically depulped, and fermented for 12-24 hours depending on altitude, then dried in solar tents or raised dryers. The coffee features tasting notes of apple, raspberry, pastry chocolate, and almond brittle. It is certified organic (NOP-USDA, RTPO, and EU) and UTZ compliant.

Monkee Koffee

Opened in late 2014 by Oscar Gonzalez and Salvador Figueros, Monkee Koffee was among Madrid's earliest specialty coffee spaces. The founders came from careers in TV and marketing, and drew inspiration from roasters like Blue Bottle and Panther Coffee in Miami. The shop landed in an untrendy, residential corner of the Chamberi district and set about building a local audience for a style of coffee drinking that barely existed in Madrid at the time. For years, Monkee sourced its beans from Spanish micro roasters including Puchero and others, with baristas certified by the SCA. In 2025, the operation began roasting in house from selected small producers. Monkee's identity leans as much on atmosphere and community as on the coffee itself, with weekend brunches, a communal table culture, and a deliberate effort to make specialty coffee feel welcoming.
