This coffee is a blend of two Paraneima lots from Las Flores, Santa Barbara, Honduras, produced by Edin Ever Sabillon and Nery Martinez. The blend combines washed and natural processed beans to create a complex profile. The washed component offers bright, tropical notes with a tea-like finish, while the natural component contributes heavy dark ripe fruit flavors, cacao nibs, and a massive body. This light roast coffee features tasting notes of cacao nibs, lime zest, and sangria.
Founded by Greg Lanctot and Jessie Lewin, rising stars in Montreal's coffee scene who roast micro and nano lots. With head roaster Jessie leading the vision, they believe all coffees should be drunk with excitement, sourcing some of the most adventurous varietals and processes in the coffee landscape.
