This Catimor coffee from Yunnan, China is grown at 1300-1500 meters altitude and processed by Olina Cai at Project One Light using a yeast anaerobic natural method. Cherries are selected at peak ripeness, double floated for consistency, treated with enzymatic hydrolysis, inoculated with specialized yeast, and fermented in airtight containers for 10-15 days before drying for 15-22 days. Light roasted with tasting notes of pu'er, peach candy, and jasmine milk tea.
