This coffee is from the Zapotitlan de Mendez community in Puebla, Mexico, within the Sierra Madre Mountains. It is produced by small farmers with a maximum of 3 hectares per person at elevations between 1,100 and 1,400 meters above sea level. The varieties include Garnica, Costa Rica, Marsellesa, and Caturra, grown under a shaded production system with various fruit trees. The coffee is washed processed, with farmers using collapsible raised drying beds with ventilated airflow systems for even and consistent drying. The flavor profile features strawberry jam, marzipan, and key lime pie notes, with dynamic flavors of fruit preserves, savory notes of sweet tomato, cooked sugar textures, and a creamy body.
