About This Coffee

This Typica coffee originates from the Puna District on Hawai'i Island, grown in Mountain View at approximately 1,500 feet elevation. It undergoes anaerobic fermentation with selected yeast and lactic acid bacteria, combined with honey processing where mucilage is retained during drying. The coffee exhibits floral and fruity characteristics with notes of rose, strawberry, lime, and sugar cane sweetness. It features a bright, refined acidity and silky, rounded body with a clean finish. Roasted light to preserve aromatics and transparency.

The roastery operates a Diedrich IR12, utilizing equipment known for precision and control in capturing the nuanced flavors of specialty coffee. Coffees have consistently achieved exceptional ratings from Coffee Review, with more than 100 coffees scoring between 93 and 97 points and an impressive five year average of 94 points. The selection specializes in Hawaiian coffees from Kona and Ka'u regions alongside carefully selected producers from Panama, Jamaica, and Vietnam.
