A unique Maragogipe (elephant bean) coffee from El Guabo farm in Chirinos, Cajamarca, Peru, grown at 1670 masl on volcanic soil. Produced by Fernando Ramirez and harvested in July, this small-lot coffee (2 bags of 70 kg) undergoes washed processing with 48 hours of tank fermentation without pulp and 21 days of drying. The Maragogipe variety is a mutation of the Ethiopian Typica. The cup is juicy and complex with gooseberry, hops, and citrus notes.
