This single origin arabica coffee is from Chikmagalur, Karnataka, India, grown at 4180 feet altitude. The varieties are SL-795 and Chandragiri. The coffee undergoes anaerobic fermentation in 3 stages for 72 hours, 48 hours, and 24 hours consecutively, then sun-dried on raised beds for an extended period with a BRIX of 22. Roasted to a medium profile with high development time ratio, low fan speed, and variable drum RPM. The flavor profile features rich, ripe raspberry backed by round milk chocolate with crisp, sweet mandarin acidity, supported by pineapple notes. Heavy bodied with deep rich tart sweetness, suitable for both syrupy espresso and expressive filter brews.
