This is a Ratnagiri RW-7 'Blossom' coffee from Ratnagiri Estate in Karnataka, India, owned and managed by Ashok Patre. It is a 48-hour culture process washed coffee made from the Hemavathi varietal, grown at 4325 feet elevation from the Silvermara Patte block. The cherries were harvested at 25.4 Brix, then fermented in bioreactors with added lab culture microbes and lactic acid bacteria for 48 hours in a carbon dioxide-rich environment. After depulping and washing, the coffee was slowly dried on raised beds over 24 days.
