About This Coffee

This coffee is from Finca Anaya in the Huila region of Colombia, grown at 1600 meters altitude. Produced by Felix Torres, it features the Ombligon variety, a mutation of Ethiopian heirloom believed to be related to Wush Wush or Sidra families. The coffee undergoes wet processing with controlled fermentation, including 24-hour whole cherry fermentation, followed by submersion fermentation at 38°C with selected yeasts and fruit pre-ferment for approximately 69 hours. The process involves pH, Brix, TDS, and temperature monitoring. Sun-dried for 8-12 days. Cupping score of 88.25. The flavor profile features raspberry soda, strawberry bubblegum, nectarine, and cream with silky mouthfeel and bright apple-like acidity.
