This community lot from Colombia is produced by farmers who cultivate, harvest, and carefully sort cherries to remove damaged or underripe fruit. Using individual micro-mills, the producers depulp the cherries and ferment the seeds in mucilage for up to 36 hours using a dry fermentation process. The coffee is then gently washed with a minimal amount of water and slowly dried on raised beds to 11 percent moisture. The resulting community blend is noted for its clean and consistent profile, reflecting the precise post-harvest practices of the contributing producers.
