This co-fermented coffee from Finca El Eden in Samaria, Palestina, Huila, Colombia is produced by Rodrigo Sánchez Valencia, a third generation coffee farmer. The lot features Bourbon and Purple Caturra varieties grown at 1500 meters altitude. After handpicking at peak ripeness, cherries undergo an innovative fermentation process: a mixture of 10 different yeasts, dehydrated aromatic herbs (chamomile, mint, rosemary), and molasses ferments for 190 hours before cherries are added for an additional 150 hours of co-fermentation. The coffee is then washed and dried on parabolic beds. The cup profile is pleasantly herbal and balanced with aromatics reminiscent of green tea, featuring lemon verbena, white peach, and floral honey notes.
