This coffee originates from Huila, Colombia, sourced from producers at Asociación La Victoria. The beans are grown at elevations between 5200-5900 feet and consist of mixed varieties including Bourbon and Typica. The coffee is washed processed. It features a heavy and rich body with flavor notes of bittersweet chocolate, spiced rum, and dried cherry. The coffee is seasonally sourced from a rotating single origin, featuring dense, high-quality beans with natural sweetness and balanced acidity, crafted to endure a darker roast while remaining smooth and deeply satisfying.
Gotham Coffee Roasters was founded in Brooklyn in 2013 by Chris Calkins, a coffee professional whose career traces back to a mentorship with Alfred Peet, the Dutch American roaster widely regarded as the father of the specialty coffee movement. Calkins went on to cofound Spinelli Coffee in San Francisco, work with La Marzocco, and build an award winning wine label before returning to coffee with Gotham. The roastery sources through direct relationships with farmers, bringing Calkins' decades of sensory expertise to every roast.
