This coffee is from Tolima, Colombia, sourced from family-owned farms organized around Asociación de Productores Agropecuarios de Santa Rosa (ASPRASAR). The Tolima Especial lot was grown between 1,700 and 2,100 meters above sea level. It is washed processed and roasted to a medium-light level. Tasting notes list chocolate, nougat, and stone fruit, with a creamy body noted in the cupping.

Canyon Coffee was founded in 2016 by the husband-and-wife team of Casey Wojtalewicz and Ally Walsh, who shared a passion for how coffee brought people together.
