This Colombian coffee is sourced from smallholder producers in the Inzá municipality within the Tierradentro region on the western side of Cauca. The region sits on the Macizo Colombiano plateau at altitudes between 1700-2000 meters. Eighty percent of the region is inhabited by the indigenous Paeces tribe, who cultivate coffee on farms averaging 0.5 to 1.5 hectares. The coffee is a blend of Caturra and Castillo varieties, processed using the washed method. The coffee features candied orange acidity with sweet caramel notes and a smooth milk chocolate body, finishing with a hint of nutmeg. It is omni-roasted for both espresso and filter brewing methods.
Named after the ancient Roman name for Lisbon, Olisipo Coffee Roasters was founded by Antony Watson and Sofia Gonçalves with a mission to honor their city's history of exploration. They see themselves as modern-day navigators, exploring the world to source unique and high-quality beans from small, independent producers. Their roasting style is dedicated to showcasing the stories and distinct flavors of these origins.
