This single origin coffee is from Sierra Mixe, Oaxaca, Mexico, grown by smallholder producers at 1600 meters elevation. The varieties are Borbón and Caturra, processed using the washed method. The flavor profile features cacao nibs, oat cookie, and fruit leather. This is a 6th year project coffee from a collective of producers around Santiago Atitlán, imported by Red Fox Coffee Merchants. The coffee delivers super balanced cups with caramel and creamy characteristics, complemented by acidity that keeps it buoyant.
