This coffee is from Santo Tomas village in the Cutervo province of Cajamarca region, Peru, grown at 1800-2100 meters above sea level. The varieties are Caturra and Catuai. The coffee has a snappy yet rich profile with crisp apple and blackberry notes that transition into nutty confections including cashew butter and black mission fig flavors. The sweetness develops into cashew cream wafer cookie notes with milk chocolate depth and mild berry echoes in the aftertaste. The region is known for high-altitude, cold and humid weather conditions where coffee has adapted extraordinarily well, with farmers increasingly adopting organic and shade-grown methods.
