The variety is Castillo Colombia, processed using the washed method with 12-hour cherry oxidation, followed by depulping and 12-16 hour fermentation in water. The coffee is dried on small patios for 10-15 days. Flavor notes include cherry, honey, chocolate with almonds, and butter. The cooperative consists of 60 coffee-growing families focused on differentiated coffees and innovation.
