Geisha variety from Quindío, Colombia at 1800m elevation, produced by Sebastian Ramirez at El Placer. This coffee undergoes CM White Honey processing with yeast inoculation: cherries are placed with mosto and inoculated with a proprietary botanical yeast mixture for 48 hours, then depulped without water and dried on shaded patios. Light roast with complex aromatics of lavender florals, cardamom spice, apricot, nectarine, and mandarin orange notes.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
