Brothers Charles and Raphael Corot returned to Paris after studying in the United States and opened Cafe Nuances, a roastery whose name nods to the 50 nuanced shades they believe coffee can express. All coffee is roasted in house from ethically sourced, traceable specialty beans, and the menu organizes five distinct origins under evocative names like Slow Dance for their Brazilian with chocolate notes and Rose des Sables for an Ethiopian with lychee, jasmine, and pineapple. Brewing spans Chemex, V60, and espresso alongside a creative specialty latte program featuring matcha rose, salted caramel, and pistachio variations. The logo, a dancing couple illustrated by artist Pol Montserrat, captures the playful energy of a brand that has quickly become one of Paris's most talked about specialty operations.
