About This Coffee

Slumber is a decaffeinated coffee from Selva Negra, a family-owned farm in Nicaragua. The coffee is decaffeinated using a mountain water process, where pure water from high mountains is used to steam the green beans and extract caffeine through a water-based saturation solution while preserving the bean's natural flavor compounds. This chemical-free method results in more flavorful decaffeinated beans. Slumber is Alma Coffee's second decaf offering, designed to be lighter than their original decaf roast, Dreamer, while offering surprising complexity.

Alma Coffee

Alma Coffee was founded in 2018 by Leticia Hutchins, a fifth generation Honduran coffee farmer, and her husband Harry, a veteran. The women owned, farm to cup operation manages the entire process from agriculture to roasting, working three family farms in Copan, Honduras: Finca Fer, Finca Don Victor, and Finca El Igureral. The farms hold USDA Organic, Fair Trade, and Smithsonian Bird Friendly certifications, the last of which confirms shade grown practices that provide habitat for migratory birds. Roasting takes place at a 3,500 square foot facility in Canton, Georgia, where the team uses two Loring Smart Roasters, a 15kg Falcon and a larger S35 Kestrel, making Alma the first roaster in Georgia to operate Loring equipment. Their range includes Natural Process, Honey Process, and Wet Wash coffees alongside cascara made from their own coffee cherries.
