About This Coffee

This coffee is from Nicaragua's Nueva Segovia region, specifically from Finca El Cipres, a 20-hectare farm managed by producer Isacio Javier Albir Vilchez. The farm transitioned from cattle to specialty coffee in 2004. This microlot features the Parainema varietal, grown at 1400 meters altitude. The coffee is washed processed, with hand-selected cherries fermented for 36 hours before being carefully washed and dried at Cafetos de Segovia. The harvest period runs from October to March. The flavor profile includes fresh lemon, chocolate fudge, tangy citric acidity, brown sugar notes, and smooth honey-like sweetness.
