This washed red bourbon coffee is from producer Stanislas Kayitera, a member of the Kobakanya cooperative in Rwanda's Nyamasheke District. The coffee is grown in the hills around Rugeregere village at altitudes between 1635 and 1750 meters above sea level. Processed at the Akagera Station in southern Rwanda, cherries are floated twice for quality sorting, undergo brief in-cherry fermentation before depulping, followed by 24-hour wet fermentation. Drying begins under shade for 72 hours with constant sorting for pest-related defects, then completed in full sun on raised beds. The coffee features vibrant candied citrus sweetness, sparkling acidity, and a long floral chamomile finish.
