This coffee originates from the Cauca region in southwestern Colombia, specifically from the Meseta de Popayán area at 1700-2000 meters altitude. It is sourced from 65 small-scale farmers working on volcanic soil in cool, rainy highlands rich with indigenous settlements and ancient archaeological sites. The varieties include Castillo, Caturra, and Colombia. The coffee undergoes washed processing and is decaffeinated using the E.A. (Ethyl Acetate) natural decaffeination method, which uses ethyl acetate derived from fermented sugarcane molasses. The flavor profile features garden berries, cherries, and dark chocolate with balanced, deep, floral, and caramelized characteristics.
