This decaffeinated coffee originates from Caldas, Colombia, produced by smallholder farmers at altitudes between 1,400 and 1,900 meters. The coffee features Caturra and Castillo varieties, processed using a washed decaffeination method. The decaffeination process uses high mountain spring water and ethyl acetate extracted from sugar cane molasses, a natural solvent selective for caffeine. Higher altitude coffees with elevated acidity were selected to compensate for the characteristic sweetness of decaffeinated coffee. The flavor profile includes plum, raisin, hazelnut, milk chocolate, and cinnamon notes.
