This low-caffeine coffee is produced by the Hernández family at Los Nogales farm in Pitalito, Huila, Colombia. The farm has a distinguished history, including winning Colombia's Cup of Excellence in 2005. The coffee is washed and processed using an EA (ethyl acetate) decaffeination method that removes approximately 95% of caffeine while preserving the aromatic profile. A controlled 96-hour fermentation with sourdough from previous batches enriches the complexity. Grown at 1750-1950 meters altitude, this Typica varietal offers bright acidity with fruity notes of lemon, bergamot, and strawberry.
